4 Weeks to Fill Your Freezer: Chocolate Chip Oatmeal Cookies

Alrighty, so I’m still behind on MSM’s 4 Weeks to Fill Your Freezer Challenge.  My little one went to work with daddy today and I find myself alone on this lovely rainy Friday waiting for furniture delivery.  Perfect time to get a little freezer cooking done.  And rain and cookies make sense, right?

I hear this cookie recipe is delish so I was happy to make a batch.  😉

The recipe calls for shortening OR butter.  Hmm, I rather think I’m in the mood for shortening…:)

It’s a simple recipe, too.  I love that.  Cream together the eggs, shortening, vanilla, sugars (I used raw and brown), vanilla, and peanut butter.

Then mix in oats, baking soda, salt, whole wheat flour (I used 1/2 cup of white in place of a bit of wheat), and good ol’ chocolate chips.  Yum!  Am I the only person who doesn’t use a whole 12 oz. bag of chocolate chips when a recipe calls for it?  I prefer a bit less of the chips and a little more dough in my bites.  Is that unheard of?

Roll the dough into balls and stick in the freezer for about 2 hours.  Then store them in freezer bags in the freezer.  Simply take out a few to bake when your heart desires.

Can’t wait to try a few (tonight of course!).  I’ll let you know how we like them!

Update: Baked a few last night and they were yummy!

  1. We made these too. They are so good. I don’t think they will last very long in our freezer. I really thought that making these with all whole wheat would make them too heavy. But to be honest I really couldn’t tell much difference.

    • So good to hear, Shelly. I’ll be taste-testing in just a couple hours 😉 I’m thinking if I love them (and it sounds like I will) I need to make another freezer batch. 🙂

  2. Yea, you made them! They are good, and Shelly is right…you can hardly tell that they are made with whole wheat.
