Our Menu (Week of May 20, 2012)

I’m hoping to focus on household organization this week (will it ever end?) so, for the most part, I’m keeping our menu plan easy and familiar.  Since it officially feels like summer, I’m taking advantage of both the grill and my husband–he can grill while I make the sides ;).  Easy!

Here’s what’s on our menu this week:

Cinnamon roll biscuits

  • Leftovers x 2 plus fruit
  • P.b and jelly, watermelon, yogurt
  • Ham and cheese sliders, fruit
  • Bean and cheese burritos (made with homemade refried beans hopefully), fruit salad
  • Taiwanese noodle bowl with veggies
  • Egg salad sandwiches with avocado & tomato, strawberry smoothies

  • Chicken Olivia over rice, tossed salad, broccoli
  • Herb-roasted salmon, rice, sautéed garlic spinach, roasted mushrooms
  • Beef tostadas, homemade refried beans, sweet corn cake
  • Baked honey mustard chicken thighs with peppers, veggie tian, couscous
  • Grilled rib eye steaks, creamy mashed potatoes, grilled asparagus and mushrooms
  • Tortellini bake, spinach salad, roasted squash, garlic bread
  • Leftovers Night

  • Pineapples, melons, apples, bananas
  • Graham crackers with p.b, cheese bites
  • Yogurt & veggies

Freezer Cooking & DIY Session:  I don’t do a traditional once-a-month session, but generally choose 2 or 3 recipes.

  • Slow cooker refried beans (still haven’t made this…yikes)
  • English muffin bread (4 loaves)
  • And: TBD from MSM’s 4 Weeks to Fill Your Freezer Challenge

What’s cooking in your home this week?

  1. My first visit here and I love it! I am really excited to see you post lunch recipes because I am in search of new ones for my boys over the summer and for the upcoming school year! Thanks for your visit.

    • Thank you so much! I hope you find something you like or ideas from the lunches :). I don’t have to pack a lunch for my little one yet, but I already find lunch the toughest meal to plan.

  2. Looks yummy – especially your breakfasts! I love, love, LOVE big breakfasts! I forgot how much I like egg-in-a-hole (I’ve always called it egg in a basket, but I think just because I grew up having it called that) – now I’m wanting to make it! And those Cowboy Breakfast Sandwiches look SOOOO good! Can’t wait to see how the freezer refried beans turn out – we love Mexican at our house!
    Here’s what we’re eating:

    • I love how egg-in-a-hole/basket has a million name variations 🙂 I’ll definitely let you know how the beans turn out. I keep hearing how much better they are than the canned beans…which shouldn’t be a surprise, but why haven’t I done it already?

  3. I need to try the English Muffin bread too…saw a recipe for it in Cook’s Country! It looks heavenly 🙂
