Our Menu (Week of May 13, 2012)

Mother’s Day balsamic Italian pasta salad (with enough leftovers for lunch this week)

I hope all you mamas had a relaxing and hug-filled day with your loved ones!  We celebrated Mother’s Day at our place and stuffed ourselves silly.   Everyone left with leftovers and now we, too, have leftovers to get me started on our menu plan.

I made my frozen key lime pie for dessert.  Too darn good.  Too darn NOT good for your waistline.

Here’s what’s on our menu this week:


  • Baked french toast, pineapple
  • Strawberry pineapple smoothies (the fresh pineapples lately are DELICIOUS), mini quiches
  • Baked apple oatmeal, pineapple, milk x 2
  • Green monster smoothies, banana bread, watermelon
  • Egg-in-English-Muffin-Hole 🙂 , fruit (I’m hoping my homemade English muffin bread works out so I can make this one)
  • Fruit parfaits, multi-grain toast


  • Leftovers x 2 plus fruit
  • Balsamic Italian pasta salad, watermelon
  • Broccoli ham and cheese pockets, apples
  • P.b and jelly, watermelon, yogurt
  • Snack-ey lunch
  • Chicken salad on french rolls, fruit


  • Pizza pockets (from 4 Weeks to Fill Your Freezer challenge–I was too tired to cook dinner after our filling brunch!)
  • Slow cooker pork tenderloin (didn’t get to this last week), homemade applesauce, glazed carrots, rolls
  • Ranch chicken, roasted red potatoes, peppers, & onions, spinach salad
  • Teriyaki glazed salmon, roasted asparagus & crookneck squash, brown rice
  • Beef taquitos, avocado salsa, homemade refried beans, sweet corn cake
  • Slow cooker sloppy joes, corn on the cob, veggie tian
  • Leftovers Night


  • Pineapples, watermelon, apples, bananas
  • Hummus & multi-grain crackers
  • Yogurt & veggies

Freezer Cooking Session:  I don’t do a traditional once-a-month session, but generally choose 2 or 3 recipes. 

  • Lemon pound cake (2)
  • Broccoli ham and cheese pockets
  • Slow cooker refried beans (didn’t get to this last week)
  • And: TBD from 4 Weeks to Fill Your Freezer project

  1. Just reading your dinners made me hungry! They sound great!! I love my slow cooker!! I also make pork tenderloin in it. I just found a great balsamic vinegar glaze for slow cooker pork on pinterest a few weeks ago. It was great!! And roasted red potatoes are one of my absolute favorites! Enjoy your dinners!! 🙂

    • Thank you so much! Good to hear you like tenderloin in the slow cooker–that helps lessen my fear of it since it is a recipe I haven’t tried yet. Ooo, that glaze sounds delicious–I’ll have to find it!

  2. Your menu looks good. I made some refried beans for the freezer last week. I had not done this for a while so it is nice to have some ready in the freezer.
