Our Menu (Week of April 15, 2012)

 My menu-planning and to-do list review session this morning.  I gather up a hot beverage and my to-do lists;  I enjoy this weekly cozytime “task.”

 I’m using a whole chicken in 3 different meals this week.  My attempt to a) not waste ingredients/food and b) fill our menu with yummy meals without overspending (which I am guilty of doing at the grocery store.  I love grocery shopping just as much as clothes shopping). 

Here’s what’s on our menu this week:


  • Pumpkin muffins, tangerines
  • Blueberry lemon pancakes, bananas, o.j.
  • Oatmeal w/wheat bran & dried cherries, fruit
  • Ranch House burritos (Gooseberry Patch recipe), o.j.
  • Berry smoothies, toast strips
  • Cereal, fruit
  • Overnight French toast, Green monster smoothies


  • Leftovers x 2 plus fruit
  • Chicken salad sandwiches, fruit
  • P.b and jelly, fruit, milk
  • Veggie pasta salad, honey cornbread
  • Zucchini fritters (trying a new Gooseberry Patch fritter recipe), fruit salad
  • Quesadillas, apple & pear slices


  • Leftovers Night
  • Baked chicken, savory orzo (a new Gooseberry Patch recipe), broccoli
  • Meatloaf, mashed potatoes, roasted carrots and crookneck squash
  • Blushing penne, simple salad, asparagus, easy rolls
  • Southern pork barbeque (another one from Gooseberry Patch; I gotta test them out 🙂 ), honey cornbread, veggie
  • Chicken roll-ups, salad, asparagus
  • Leftovers Upcycle Night :)–Creating something new with leftovers


  • Fruit
  • Veggies, crackers, & dip
  • Yogurt

Freezer Cooking Session:  I don’t do a traditional once-a-month session, but generally choose 2 or 3 recipes. 

  • Creamy chicken with mushrooms
  • Beef dish (undecided)
  • Casserole (undecided, but will include chicken)

  1. sounds delicious. x I’m very jealous of the breakfast menu – my bowl of cereal seems very boring!

  2. My breakfast this morning was oatmeal mush half an overripe banana (an anti cancer doc on martha said riper better I prefer them hard of course) and fresh oj….ok Im trying yesterday I had an egg bacon and cheese biscuit:-)

    • ha! Ugh…I don’t like bananas. It may be the one fruit/veg I don’t enjoy and yet eat all the time. Lise and T put bananas in their oatmeal, too. I have to eat it quickly when I wake up delirious before I realize it is a banana 🙂

    It’s great that you incorporate leftovers in your lunch and dinner plan. I know all of us have that and sometimes, when we get too excited to try lots of recipes, we forget these leftovers until we can’t eat them anymore. LOL.

    • Thanks! My husband is a fan of leftovers and they’re so easy to feed the little one for lunch so why not, right? If I don’t write it down, I sometimes keep shoving them farther and farther back into the fridge…wasteful and inefficient on my part!

    • Thank you, Lori and welcome! 🙂 I use various planners, but the one pictured is from moneysavingmom–love her. Most of my recipes are my own/from my mom, etc. though more and more are adaptations from recipes I find from my dozens of my cookbooks and online. I love reading and discovering new recipes!
